Rice Krispies Cookies

Rice Krispies Cookies

1 Cup Rice Krispies
1¾ Cup Flour
1 tsp Baking Soda
1 tsp Cinnamon
¼ tsp Nutmeg
½ tsp Salt
½ Cup Butter
2 Tblsp Honey
1 Cup Applesauce
½ Cup Raisins

Mix together Flour with Baking Soda, Cinnamon, Nutmeg and Salt. In a separate larger bowl, cream together Butter & Honey. Add dry mixture and combine well. Stir in Applesauce and Raisins mixing until a moist cookie dough forms. Finally, stir in Rice Krispies cereal. Drop tablespoon sized onto ungreased cookie sheets. Bake at 350 degress for about 10 minutes or until golden brown. Makes about a dozen.

Rice Crispy Coconut Cookies

2 Cups Rice Krispies
1 Cup Butter
1 Cup Brown Sugar
1 cup White Sugar
2 Eggs
1 tsp Vanilla
1 tsp Baking Soda
½ tsp Salt
2 Cups Flour
2 Cups Quick Oats
1 Cup Shredded Coconut

In a large mixing bowl, cream together Butter with both white and brown Sugars. Add Eggs, Baking Soda and Salt. Stir until well combined. Add Flour and Oats and mix until ingredients begin to form a dough. Fold in Shredded Coconut and Rice Krispies. Using spoonfuls, place one inch balls of cookie dough on an ungreased cookie sheet, about one inch apart. Lightly press each down with the back of a fork. Bake at 350 degrees for about 12 minutes or until golden brown. Allow to cool and Enjoy!

Raisin Bran Cookies

2 Cups Raisin Bran
2 Eggs
1 Cup All Purpose Flour
1 Cup Whole Wheat Flour
¾ Cup Butter
¾ Cup Sugar
½ Cup Brown Sugar

In a large bowl, mix Butter and Sugars until it forms a smooth consistent paste. Add Eggs and stir until completely combined. Add Flour and mix until mixture becomes a cookie dough. Spoon out 1 inch balls about 2 inches apart onto cookie sheets and flatten each lightly with the back of a fork. Bake at 325 degrees for 10 to 15 minutes or until light brown.

Cinnamon Cornflake Cookies

Cinnamon Cornflake Cookies

2 Cups Coarsely
  Crushed Corn Flakes
1½ Cups Flour
1 tsp Baking Powder
1 tsp Baking Soda
1 Tblspn Cinnamon
Pinch Salt
1 Cup Butter
1 Cup Sugar

Mix together dry ingredients in order. Flour, Sugar, Baking Soda, Salt, Cinnamon and Crushed Corn-Flakes. Set aside. In another larger bowl, mix Butter with Sugar. Add dry ingredients and mix well. Pour mixture into a greased 9 inch square cake pan. Bake at 350 degress for about 30 minutes or until wooden toothpick comes clean after inserting in the center. Allow to cool completely and cut into squares. Makes about a dozen.

Instant Oatmeal Cookies

Instant Oatmeal Cookies

2 Cups Coarsely
  Crushed Corn Flakes
4 Pkgs Instant Oatmeal
  (any flavor)
1 Cup All Purpose Flour
½ Cup Butter
½ Cup Brown Sugar
¼ Cup White Sugar
¼ tsp Baking Powder
½ tsp Baking Soda
1 TblSp Milk
1 Egg

In a large bowl, mix together Butter, Egg, White Sugar and Brown Sugar. In a separate bowl, combine Flour, Baking Powder and Baking Soda. Add Flour mixture to Butter mixture. Add Milk and stir until all ingredients are well combined. Add crushed Cornflakes and Instant Oatmeal. Stir until mixture forms a dough. If needed, use hands and/or add another tablespoon of milk. Roll pieces of dough into 1½ inch balls and place on an ungreased cookie sheet leaving enough space between each for them to expand. Using a fork, flatten each ball to about ½ inch. Bake at 350 degrees for about 10 minutes or until light golden brown. Makes about 2 dozen.
