Banana Coconut Bread

All-Bran Banana Coconut Bread

1 Egg
½ Cup Milk
½ Cup Mashed Banana
3 Tblsp Butter
3 Tblsp Honey
6 Tblsp Flaked Coconut
¾ tsp Salt
½ Cup All Bran Cereal
1½ Cup
  Whole Wheat Flour
1½ Cup Bread Flour
2¼ tsp Yeast

This recipe is for a Bread Machine

Add all ingredients in order to your bread pan.
Use Whole Wheat, medium crust setting.

Chocolate Banana Cake

Chocolate Banana All-Bran Cake

1 Cup All-Bran Cereal
1 Cup All Purpose Flour
1 Cup Mashed Bananas
1 Cup Chocolate Chips
½ tsp Baking Powder
¼ tsp Baking Soda
½ tsp Cinnamon
¼ Cup Butter
¾ Cup Sugar
¼ Cup Milk
1 Egg

Melt Chocolate Chips in a Double-Boiler. While chocolate is melting, in a medium size bowl, mix together Flour, Baking Powder, Baking Soda, Salt and Cinnamon. Set aside. In another larger bowl, stir together as you add Butter and Sugar, Mashed Bananas, Egg, Milk, All-Bran Cereal and the Melted Chocolate Chips. Add dry ingredients and mix well. Pour mixture into a greased 9 inch square cake pan. Bake at 350 degress for about 30 minutes or until wooden toothpick comes clean after inserting in the center. Allow to cool completely and cut into squares. Makes about a dozen.

All-Bran Cereal Crackers

All-Bran Cereal Crackers

1 Cup All-Bran Cereal
2 Cups All Purpose Flour
½ Cup Brown Sugar
1 tsp Baking Soda
½ tsp Salt
3 TblSp Butter
¼ Cup Water
½ Cup Honey
1 tsp Vanilla Extract

In a large mixing bowl, combine All-Bran Cereal, Flour, Brown Sugar, Baking Soda and Salt. Add Butter and stir with a fork until ingredients begin to form a crumbly mix. Add Honey, Water and Vanilla. Stir until mixture forms a dough. Grease and sprinkle flour onto two baking pans, about 15 by 10 inches each. Using a rolling pin, flatten half the dough mixture onto each pan until dough is about 1/8 inch thick. Cut dough into 2 or 3 inch pieces and fork the centers. Bake at 325 degress for about 15 minutes. When golden brown, remove from oven and recut pieces while crackers are still hot without removing them from the baking pans. Allow to cool before severing. Makes about a dozen crackers.

These are great served with Vanilla Ice Cream or used as Crackers for Smores.

All-Bran Cookies

All-Bran Cookies

½ Cup All-Bran Cereal
1½ Cups Flour
1 tsp Baking Powder
1 Cup Brown Sugar
½ Cup Butter
¼ tsp Vanilla Extract
1 Egg

In a large mixing bowl, combine Flour and Baking Powder. In a second bowl, using a fork mix Butter and Brown Sugar until it forms a paste. Add Egg and Vanilla Extra. Mix well until smooth. Add All-Bran Cereal and Flour and stir until combined ingredients forms a dough. Use hands if needed.

Using half the dough, roll and shape into a log about 1½ inch thick. Roll and wrap in wax paper and refrigerate overnight. Repeat with remaining half of dough.

Cut discs off logs about ¼ inch thick and place on greased cookie pans. Bake at 400 degrees for about 10 minutes or until golden brown. Allow to cool and serve. Makes about three dozen.

Optional : Add ½ Cup of Walnuts, Macadamia Nuts or Chocolate Chips at the same time you add cereal for added flavor.
